Orange Glazed Salmon
Serves 4
Ingredients:
4 salmon filets, thawed
4 tablespoons orange marmalade
Parsley, freshly chopped (optional)
Orange slices (optional)

Directions:
1.
Lay fillets on a sprayed sheet pan and spread 1
tablespoon of orange marmalade over each piece of salmon.
2.
Bake in a 350 degree F oven for 6-12 minutes, or
until an internal temperature of 165 degrees F is reached.
3.
Garnish with fresh parsley and orange slices.
Grilled Lemon Chicken
Breast
Serves 4
Ingredients:
4 – 4 oz chicken breasts, thawed Zest of one lemon
¼ tsp ground pepper Juice of one lemon
1 tsp salt 1 tablespoon fresh parsley, chopped
1 tsp minced garlic ½ tsp fresh thyme, chopped
½ tsp fresh rosemary, chopped ½ tsp fresh basil, chopped
1 tablespoon olive oil
Directions:
4 – 4 oz chicken breasts, thawed Zest of one lemon
¼ tsp ground pepper Juice of one lemon
1 tsp salt 1 tablespoon fresh parsley, chopped
1 tsp minced garlic ½ tsp fresh thyme, chopped
½ tsp fresh rosemary, chopped ½ tsp fresh basil, chopped
1 tablespoon olive oil
Directions:
1.
Zest one lemon and juice into a bowl. Add all
herbs to lemon juice and zest.
2.
Toss chicken with salt, pepper, garlic, and half
of the oil. Add herb mixture to chicken and toss well.
3.
Add rest of oil to frying pan and heat to medium
high heat and preheat oven to 350 degrees F.
4.
Sear the chicken breast quickly for 1-2 minutes
each side or until golden brown in color. Place on baking sheet and bake for
10-15 minutes, or until internal temperature of 165 degrees F is reached.
5.
Let chicken rest for 5-10 minutes before cutting
to keep it moist.
